The Hanging Rock Winery sources fruit from all over Victoria. We source grapes from regions that best suit certain varieties. For example, due to the warm days and cold nights that they receive in Bendigo, Cabernet grows very well there. The cold nights help develop great tannin structure, just the way we like our Cabs.
2016 was another hot and dry season and yields were below average but generally better than anticipated, and the fruit quality is excellent.
A lifted bouquet of cassis and aniseed precedes a palate of sweet winter fruits, blood plums and blackberries. The palate is long and fleshed out. Good acid structure and chalky tannins complete this delicious package.
